The Vino Novello In Italy – A Taste Of New Wine

There are several rules that pertain to the vino novello in Italy. For example, it is only allowed to be sold after November 6th of the year of the grape harvest, after midnight.

Although you may taste the new wine at festivals that take place before this date, this is the official date for it to have the vino novello label. It's also traditional to drink the wine before the end of January, so this gives you a fairly short window of time in which to experience the wine.
The deadline for bottling young wine is the 31st of December, and the wine will have a minimum alcohol content of 11%.

Some say that vino novello is similar in taste to Beaujolais, so you will find some cellars giving side by side tastings of the two wines.

It is made using a slightly different process to regular red wines, however, using a different processing procedure called carbonic maceration. This accelerates the rate at which the grapes ferment, with the entire fermentation process lasting only about 20 days.
